A:
300g plain flour
100g custard powder
1 1/2 teasp baking powder
B:
200g cornflakes
100g roasted peanuts (or macadamia)
C:
250g butter
180g fine sugar
1 1/2 teasp vanilla essence
2 medium eggs
Method:
1. sift together ingredients A, finely ground ingredients B & stir in with A. set aside.
2. cream ingredients C till almost fluffy, add flour mixture A&B, mix well til form soft dough.
3. roll dough about less than 1cm, cut with cookie cutter.
4. place cut dough on lightly greased baking tray, allow a little room for spreading.
5. sprinkle coloured rice (or other decos) and pat a little on the cookies.
6. bake in preheated oven at 180 C for 15-18 mins or until lightly brown. remove from oven and let cool for 20mins.
