Ida's Moist Choc Cake (or Cupcakes)


Mix till fluffy in mixing bowl:
250g butter
200g fine sugar
5 large eggs
Sift in separate bowl:
250g plain flour
40g cocoa powder
1/4 teaspoon sodium bicarbonate
1 teaspoon baking powder
Add sifted flour mix to butter mix, little by little till done.
Add 100g melted cooking chocolate to mixture.
Add 3/4 cup cool water. Mix well.
Meanwhile, preheat oven to 180C.
Pour mixture in baking pan lined with butter paper.
Bake for 45 mins or till done.
For cupcakes, bake at 165C for 15-20 mins or till done (depends on cupcake size).

Ida's Homemade Burger & Buns



Buns:
1 large egg at room temperature
1 cup cool (fridge) water
3 tablespoon vege oil
3 tablespoon sugar
1 tablespoon dry milk powder
1 teaspoon salt
3 1/4 cups bread flour (high protein flour)
1 1/2 teaspoon dry yeast
3 tablespoon butter

Mix all ingredients in mixer or breadmaker till becomes elastic dough.
Cover with cloth and leave to rise for 30 mins.
Divide into 6-8 portions and form into buns.
Arrange on lightly buttered baking tray.
Leave to rise for another 30 mins.
Meanwhile preheat oven to 180C.
Bake for 25-30 mins or till done when top of buns are golden brown.

Burger:
2 cups minced beef
1 cup breadcrumbs
1/2 large onions and 3 psc garlic finely chopped
1 tablespoon worchestershire sauce
sugar & salt to taste
Mix all ingredients.
Divide into 12-15 portions and form into burger shape.
Optionally, beat 1 egg and add to burger mixture little by little if burger is difficult to form.
Cook on grill or lightly buttered non-stick pan.
Serve with grilled mushroom, salad, tomatoes, sliced onions, mayonaise, chilli sauce, tomato sauce, etc as desired.

Ida's Fruitcake


Cook in pot on stove til well mixed and leave to cool:
1 cup butter
1 cup sugar
1 cup water
1 box mixed fruit

Sift in separate bowl:
2 1/4 cups plain flour
1/2 teaspoon baking powder
1/2 teaspoon soda bicarbonate

Beat till fluffy in mixing bowl:
3 large eggs
1/2 teaspoon vanilla essense

Add 1 scoop cooled fruit mix above to egg mix in mixing bowl.
Add 1 scoop flour mix to mixing bowl.
Alternate 1 scoop of fruit mix and flour mix into mixing bowl til ingredients done.
Meanwhile preheat oven to 180C.
Pour cake mix into pan lined with butter paper.
Bake for 45 mins or til done.

This mix makes 8" x 8" x 2" cake as shown in picture.

Ida's Cheesy Garlic Bread



1 egg at room temperature plus 27'C water to equal 1 cup
2 tb sp oil
1/3 cup fine sugar
1 t sp salt
1 tb sp dry milk
3 1/2 cups bread flour
1 1/2 t sp active dry yeast

topping:
parmesan cheese
finely minced garlic
butter
(alternatively, use garlic butter spread)

Method:
1. Mix all ingredients and knead for about half an hour until it turns into smooth dough.
2. Leave to rise for 1 hour.
3. Place dough on a lightly floured surface, roll dough to 1 inch thick and divide/cut into 6 portions.
4. Shape dough in long twists and place on greased baking pan.
5. Apply topping, cover with plastic cling wrap and let rise in a warm place for 45 minutes or until double in size.
6. Bake at 165'C for 30 to 40 minutes, or until done.

Nice served warm, about after 15 minutes out from oven.

Ida's Choc Chips Cookies

Beat batter:
250g butter
1 tb sp shortening
160g brown sugar
1 egg yolk
1 t sp vanilla essence
Mix well:
250g flour
20g cocoa powder
150g choc chips (or mix with white chips/ choc rice/ coloured rice)
100g roasted chopped almonds
20g coloured stars
1. Mix and beat batter till semi-fluffy. Add egg yolk and vanilla esence a little later.
2. Add flour mixture, mix well.
3. Spoon mixture on to baking pan and press with fork to flatten it a little.
4. Bake in preheated oven 180'C for 25 minutes or till golden brown.

Bread

Recipe from Alex Goh - The World of Bread

Ingredients (A)
480 gram bread flour
120 gram plain flour
110 gram sugar
10 gram salt
20 gram milk powder
4 tsp instant yeast

(B) 1 egg300 ml water

(C) 60 gram butter

Instructions
Mix (A) till well blended.
Add (B) and knead to form a dough.
Add (C), continue to knead to form a smooth and elastic dough.
Cover dough with clear film.
Let it proof for 50 -60 minutes or till it double in size.
Divide dough into 60 gram portions, shape into balls and let the dough rest for 10 minutes.
Shape the dough into oval shapes and placed them on a greased baking tray, leave to rest for a further 45 minutes
Brush with egg wash and bake in the oven at 190 degrees celsius for about 9 to 12 minutes.

Sebenarnya dari recipe ni , leh bentuk apa-apa bentuk yang suka. Recipe ni kira basic recipe..sumbat le inti amende pun, sumbat inti sambal tumis ikan bilis (ikan bilis jgan goring keras, biar dia lembut ) je..

Kalau roti cheese tu kalau yg mudah giler cam yang jual tu..buat bentuk panjang-panjang tu rapat-rapatkan dia, dah tu biar naik..bila dah naik tabor ngan cheese yang dah di parut banyak-banyak dan tabor gula. Bakar ..biar naik tinggi tau ..supaya lembut cam kapas …uihhh….nak roti yang tak kejung, senang je..jangan lupa, air yang nak digunakan haruslah air yang disimpan dalam peti sejuk.

Satu lagi tips, dia punya butter tu make sure masuk lewat sikit..seperti dalam recipe tu..
Nak lagi lembut, lepas masak,. Cover kejap roti tu ngan kain ..beberapa minit ..iza buat dalam 10 minit gitu..memang lembut je roti sampai esok..

Nutty Cornflakes

Bahan-bahan

450g butter
220g gula halus
3 ck esen vanilla
600g tepung gandum
1½ ck baking powder
90g badam cincang
180g cornflakes
150g chocolate rice

Cara-cara
1. Pukul butter & gula hingga kemb ang
2. Masukkan esen vanilla, badam cincang, cornflakes & choc. rice.
3. Masukkan tepung gandum & baking powder (diayak bersama)
4. Bulat-bulatkan adunan sebesar guli, kemudian tekan hingga leper dengan garfu utk dapatkan corak.
5. Bakar pada suhu 150’C selama lebih kurang 15 minit.Nota – Jangan ditambah lagi tepung, doh agak melekit masa mula tapi akan ok selepas beberapa minit.

NESTUM CHIP

300g butter
240g gula halus
2 biji telur
2 sk esen vanilla
580g tepung naik sendiri
1 sk baking powder
1 sk soda bikarbonat
200g nestum
250g choc chip

Cara
· Pukul butter & gula hingga kembang
· Masukkan telur & esen vanilla
· Masukkan choc chip & nestum.
· Masukkan tepung naik sendiri, baking powder & soda bikarbonat (diayak bersama)
· Bulat-bulatkan adunan sebesar guli, kemudian tekan hingga leper dengan garfu utk dapatkan corak.
· Bakar pada suhu 150’C selama lebih kurang 15 minit.

Ida's Pizza




3/4 cawan air sejuk
1 sudu besar minyak (i guna olive oil, bg rasa italian sikit...)
1 sudu besar gula
1/2 sudu kecil garam
1 sudu besar dry milk
2 1/4 cawan bread flour
1 sudu kecil active dry yeast

uli semua, buat dough, biar naik stengah jam. canai & masuk dlm pan yg ditabur dgn sedikit tepung. bagi edges dia naik sikit, taruk pizza sauce, minced meat, chopped tomatoes, chopped onions, sliced mushroom, sliced hotdog, or any other toppings, top up with a mixture of mozarella, cheddar and parmesan cheese.
bake 20 mins at 215 C. toast (bakar atas shj) for 1-2 mins utk dptkan sizzling golden brown chese.
resepi atas tu boleh buat 1 12inch or 2 9inch thick crust
ataupun 2 12inch or 4 9inch thin crust

Baked Curry Puffs

A. Short crust pastry
1 Kg. plain flour
500 gms. butter
1 glass iced cold water

1.Cut up butter into the flour till small in size.
2.With tips of your fingers, work it up into fine bread crumbs.
3. Make a well in the middle and pour in iced cold water.
4. Use metal spoon, fold in the flour.
5. Form into a few ball sized dough.
6. Rest them in a well covered mixing bowl using damp cloth for about 1/2 hour. Meanwhile, prepare the fillings.
7. Once the dough is soft, roll out and cut into circles.

B. Fillings
1 tray minced beef
6 med.sized potatoes - diced
4-5 red onions - diced
1 egg yolk or milk
6 garlics, 1 red onions, 1" ginger = blend together.
3 Tabsp. curry powder mixed with khurma powder.

1. Prepare the fillngs: fry kulit k.manis, bunga lawang, buah pelaga and cengkeh.
2. Add blended ingredients. Once done, add curry powder. Add mince beef.
3. When colors changed and potatoes and cook until done.
4. Add kicap (if you like).

Prepare the curry puffs.
Put the filling sufficient to seal the edges. Line in the baking tray, not too close together. Brush egg yolk or milk over them. Bake at 200 degrees. For new oven like yours,try with 190. Baking time 18-20 mins. It should be ready when lightly brown.

Ida's Peanut Cornflakes Cookies

A:
300g plain flour
100g custard powder
1 1/2 teasp baking powder
B:
200g cornflakes
100g roasted peanuts (or macadamia)
C:
250g butter
180g fine sugar
1 1/2 teasp vanilla essence
2 medium eggs
Method:
1. sift together ingredients A, finely ground ingredients B & stir in with A. set aside.
2. cream ingredients C till almost fluffy, add flour mixture A&B, mix well til form soft dough.
3. roll dough about less than 1cm, cut with cookie cutter.
4. place cut dough on lightly greased baking tray, allow a little room for spreading.
5. sprinkle coloured rice (or other decos) and pat a little on the cookies.
6. bake in preheated oven at 180 C for 15-18 mins or until lightly brown. remove from oven and let cool for 20mins.

BISKUT COKLAT CIPS RANGUP

guna 250g butter, tak yah cari margerin. Shortening tu akan buat biskut jadi rangup.
guna cookies flour tapi ada orang ckp guna tepung gandum pun dah rangup.
White coklate chips boleh ganti ngan chocolate rice yang warna-warni
badam cincang roast dulu.

Bahan A
125 g butter
125 g majerin
1 sudu besar shortening
160 g gula halus
1 biji kuning telur
1 s/k esen vanilla

Bahan B [gaul rata]
230 g tepung gandum
20 g serbuk koko ayakkan
100 g coklat cips
50 g white coklat cips [boleh gantikan dgn coklat rice]
50 g badam cincang [roasted]
50 g nestum

Cara
1. Gaulkan butter, majerin, shortening dan gula sehingga sebati.
2. Masukkan kuning telur dan esen vanila. Kacau rata.
3. Masukkan bahan B perlahan dan kacaukan dengan senduk kayu.
4. Sudukan adunan kecil2 [besar guli] dalam loyang.
5. Bakar dalam oven yg telah dipanaskan suhu 180'C selama 25 minit atau sehingga masak.
6. Sejukkan dan simpan dalam balang kedap udara

Choc Chips Cookies

Izan guna resipi kawan Izan. Dia memang buat biznes choc chip pun. Ni dia resipi...

200 g brown sugar ( Izan kurangkan kpd 150 g sbb tak suka manis sangat.)
250 g butter
300 g tepung gandum ( ayak bersama soda bikarbonat)
2 biji telur
1 sudu besar soda bikarbonat ( jgn penuh sgt takut kembang sgt nanti)
1 sudu teh garam
1 sudu teh essen vanilla
300 g choc chip ( ikut citarasa)
100 g badam cincang

Pukul brown sugar n butter sampai kembang. Then masukkan telur n essen vanila. Then masukkan tepung yang
dah ayak dgn soda bikarbonat tadi. Bila dah sebati masukkan choc chip dan badam cincang tadi. Bakar pd suhu 180 darjah dlm 15 minit.
