Ida's Moist Choc Cake (or Cupcakes)


Mix till fluffy in mixing bowl:
250g butter
200g fine sugar
5 large eggs
Sift in separate bowl:
250g plain flour
40g cocoa powder
1/4 teaspoon sodium bicarbonate
1 teaspoon baking powder
Add sifted flour mix to butter mix, little by little till done.
Add 100g melted cooking chocolate to mixture.
Add 3/4 cup cool water. Mix well.
Meanwhile, preheat oven to 180C.
Pour mixture in baking pan lined with butter paper.
Bake for 45 mins or till done.
For cupcakes, bake at 165C for 15-20 mins or till done (depends on cupcake size).

Ida's Homemade Burger & Buns



Buns:
1 large egg at room temperature
1 cup cool (fridge) water
3 tablespoon vege oil
3 tablespoon sugar
1 tablespoon dry milk powder
1 teaspoon salt
3 1/4 cups bread flour (high protein flour)
1 1/2 teaspoon dry yeast
3 tablespoon butter

Mix all ingredients in mixer or breadmaker till becomes elastic dough.
Cover with cloth and leave to rise for 30 mins.
Divide into 6-8 portions and form into buns.
Arrange on lightly buttered baking tray.
Leave to rise for another 30 mins.
Meanwhile preheat oven to 180C.
Bake for 25-30 mins or till done when top of buns are golden brown.

Burger:
2 cups minced beef
1 cup breadcrumbs
1/2 large onions and 3 psc garlic finely chopped
1 tablespoon worchestershire sauce
sugar & salt to taste
Mix all ingredients.
Divide into 12-15 portions and form into burger shape.
Optionally, beat 1 egg and add to burger mixture little by little if burger is difficult to form.
Cook on grill or lightly buttered non-stick pan.
Serve with grilled mushroom, salad, tomatoes, sliced onions, mayonaise, chilli sauce, tomato sauce, etc as desired.

Ida's Fruitcake


Cook in pot on stove til well mixed and leave to cool:
1 cup butter
1 cup sugar
1 cup water
1 box mixed fruit

Sift in separate bowl:
2 1/4 cups plain flour
1/2 teaspoon baking powder
1/2 teaspoon soda bicarbonate

Beat till fluffy in mixing bowl:
3 large eggs
1/2 teaspoon vanilla essense

Add 1 scoop cooled fruit mix above to egg mix in mixing bowl.
Add 1 scoop flour mix to mixing bowl.
Alternate 1 scoop of fruit mix and flour mix into mixing bowl til ingredients done.
Meanwhile preheat oven to 180C.
Pour cake mix into pan lined with butter paper.
Bake for 45 mins or til done.

This mix makes 8" x 8" x 2" cake as shown in picture.
